Our Coffees
The following cupping notes are relative to light to medium roast profiles.
As the roast profile temperature increases resulting in a medium to medium/dark and even a French or Italian roasted coffee, the aforementioned notes will be eclipsed, resulting in a more bold and roasted flavor. The darker the roast, the more subtle the flavor character differences will be between single origin and microlot coffees.
Brazil-Fazenda Santa Lúcia-Anaerobic Natural/Microlot (South America)
Cupping Notes: Syrupy sweet with tangy winey fruit acidity, cooked berry, lime and toffee flavors.
Colombian Peaberry (South America)
Cupping Notes: These are very hard beans and roast well to all profiles. Full bodied, medium acidity with bright fruit notes and somewhat floral, along with hints of cocoa and cinnamon.
Colombian Supremo (South America)
Cupping Notes: Hints of cocoa with soft cranberry – like acidity. Balanced, medium body. Refreshing finish reminiscent of cherries.
Costa Rica La Candelilla Micromill-Honey **Microlot** (Central America)
Cupping Notes: Sweet and savory with tart fruit acidity and a creamy mouthfeel; apple, green mango, toffee and lime flavors.
Costa Rica Tarrazu (Central America)
Cupping Notes: Cocoa, mellow pecan and toffee flavors with smooth mouth feel and mild citric after notes make for excellent light to medium roasts for this coffee.
Ethiopian Yirgacheffe (Africa)
Cupping Notes: The Zero Defect Sorting, which takes three times longer than other coffees from the region, makes for an enhancement of cup clarity and further intensification of this coffee’s aroma of black tea, peach sweetness and grapefruit acidity.
Kenya Mutitu-Kirinyaga-AA **Microlot** (Africa)
Cupping Notes: Brown sugar with cacao and mellow tangy raisin flavors.
Papua New Guinea-Organic Fair Trade (Oceania)
Cupping Notes: Savory and citric with nutty, herbal and cocoa flavors. Organically grown. Fair Trade.
Sumatra Orangutan Coffee Project (Indonesia)
Cupping Notes: Very well balanced, full bodied coffee. Clean with varied notes of plum and pecan.
Tanzania Peaberry (Africa)
Cupping Notes: Sweet and tart with herbal, praline, and citrus flavors
Colombian Decaf (South America)
Cupping Notes: Sweet and tart with toffee, lime and cocoa flavor.
